What is a cold Meal?

For the purpose of inputting data into AIM:  A cold meal is deli or picnic quality, including sandwiches, cold cuts, fruit, or salads.  Cold meals shall meet the one-third (1/3) Recommended Daily Allowance (RDA) requirements for nutrition values, as well as the current (as of July 30, 2013) South Carolina Department of Health and Environmental Control (SCDHEC) requirements for preparation, delivery, handling, and temperature.  Cold meals shall be prepared by a commercial food service or in an on-site kitchen.*

*SCDHEC Retail Food Establishment Regulation 61-25:  “Potentially hazardous cold food must be held at 45° F.  (7.2°C.) or below and potentially hazardous hot food must be held at 130° F. (54°C.) or above.  These temperatures must be maintained during storage, transportation, display, and service.  A product thermometer shall be provided and used to assure the attainment and maintenance of proper internal cooking and holding temperatures of all potentially hazardous food.”
